Is there anything better than a fresh tomato? If you love tomatoes like I do, you’ll find this to be one of the coolest salads ever, and so easy to make. Start with a nice big beefsteak-type tomato; slit it into wedges being careful not to cut all the way through the bottom, fill with shredded lettuce and top with bacon bits and a dressing. It is the perfect personal size salad.
After seeing this salad for the first time I searched the internet to see where it might have started. The earliest post I could find was from litehousefoods.com in early 2015. Some variations that I’ve seen include adding tuna fish, avocado, and mozzarella cheese. Like any salad, you’re only limited by your imagination.
- 4 large beefsteak tomatoes
- 1 cup shredded iceberg lettuce
- ½ cup bacon bits
- Salad dressing of your choice
Slice each tomato into 6 wedges, leaving the bottoms of the tomato intact. Carefully spread open the wedges of the tomatoes and evenly divide the lettuce and bacon bits between each of the tomatoes. Drizzle each tomato with the dressing.
