I recently ran across a recipe for strawberry bread and as I had never heard of that before, it had to be tried. One thing that I had noticed right away in reading the comments was that a lot of people had struggled to get the bread to turn out pink in color. When I made mine, I also did not get the pink color.
So I searched long and hard and found that in order to get a pink color, you need to use frozen strawberries (thawed) and make sure that you add in the juice. Since not all frozen strawberries are the same, it may or may not work for you either. I’ve found that the taste is the same, just the appearance is different. I’ve read that you can use fresh strawberries if you cook the berries down a bit, but I’ve not tried that yet.
- 3 cups all-purpose flour
- 1 tsp salt
- 2 cups sugar
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 cup chopped walnuts
- 1 (15-ounce) container frozen sliced strawberries, thawed
- 1 cup vegetable oil
- 3 eggs, lightly beaten
Preheat the oven to 350°.
Lightly grease two loaf pans with non-stick cooking spray.
In a large bowl, mix together the flour, salt, sugar, baking soda, and cinnamon until combined.
Stir in the walnuts, strawberries, oil, and eggs.
Mix until combined.
Pour into the loaf pans and bake about an hour, or until a toothpick inserted into the center of the loaves comes out clean.
