Growing up in a meat and potatoes family, I thought that I had tried every variation of potato, so when trying to come up with a twist for the blog, the obvious choice was adding my new bbq rub to see how it would turn out.
Roasting potatoes is about as simple as it gets. Chop into cubes, sprinkle some olive oil on it, and bake for 45 to 50 minutes. It’s really impossible to mess it up.
As I mentioned in the bbq rub recipe a couple of weeks ago, the heat sneaks up on you after a few bites and will stay with you for a little while.
I can honestly say that my bbq roasted potatoes is now my new favorite side dish.
Spicy roasted potatoes
- 6 large potatoes diced.
- 2 tablespoons of olive oil
- 3 tablespoon bbq dry rub
Peel and chop potatoes.
Place on cookie sheet and drizzle olive oil and dry rub onto potatoes.
Roast at 375* for 45 to 50 minutes
