A couple of months ago I found a recipe for potato salad on justapinch which is such an amazing website full of wonderful people who simply love food. I would encourage anyone looking for recipes to visit the site.
Like all recipes that I discover, the first thing that I do it is try to tweak it. First thing I added was some sweet red and green peppers followed with some diced white onions. Then I added a tablespoon of smoked paprika to add just a little smoky flavor and some additional color.
I was simply amazed at how good this turned out and can’t wait to make it again. This recipe makes quite a bit, and can be scaled down easily if you’re not making it for a group.
- 8 large cooked, diced potatoes, chilled
- 1 lb. bacon, cooked and crumbled
- 6 hard-boiled eggs, peeled and chopped
- 3 ribs celery, finely diced
- 2 cups Miracle whip
- 2 TBSP yellow mustard
- 1 TSP white sugar
- 1 TBSP smoked paprika
- Salt and pepper to taste
Cook potatoes, drain and allow to cool completely.
Fry bacon and chopped into pieces.
Mix everything together and allow to chill.
