Southern style green beans

I believe that bacon and green beans are a staple food in every southern home. The recipes vary of course, and this one was new to me. I had not cooked the beans in chicken broth before and this certainly adds a different flavor. Now I cooked mine in a skillet, but many love to throw this in a crock pot for a couple of hours. You can also add ham for a little extra flavor.

Ingredients

  • 4 Slices Bacon (cooked and cut into pieces)
  • 2 Pounds fresh green beans
  • 1 cup chicken broth
  • 1 cup water
  • ½ Tsp salt
  • ½ Tsp pepper
  • ½ yellow onion, sliced

Instructions

  1. Rinse beans in a colander, cut off ends and break in half if desired.

  2. Fry bacon in a pan until crisp. Add in onions and cut for a couple minutes or until translucent.

  3. Remove bacon and set aside. Once cool, crumble or chop into small pieces.

  4. Add green beans to pan and cook on medium heat for about 3 minutes stirring occasionally.

  5. Slowly add the chicken broth, then the salt and pepper and bring to a simmer.

  6. Cover the pan and simmer on low for about 1 hour (stirring occasionally).

  7. Drain the water/broth, add in the crumbled bacon and then serve hot.
