When I first saw this recipe, they said it tasted like the Samoas Girl Scout cookies. Can’t say that I exactly agree with that statement, but these brownies are very good. I didn’t have the easiest time finding the La Lechera as it was either sold out or not carried at most of the local stores. This stuff is basically a caramel flavored condensed milk, and there is probably more than a few ways to make it if you cannot find it at the store.
This is one of those recipes that sounds very easy, but if you’ve followed this blog you know that I can mess up even the most simple recipes. For whatever reason, brownies are my Achilles heel and I’ve yet to make a good batch, so instead of wasting the time and effort, I asked my better half to do it for me. Brownies do not scare her.
So after the brownies were made and cooled overnight, I set out to make the topping which was as easy as it sounded. I did burn a bit of the coconut while toasting, but luckily I was paying some attention to the oven and pulled the cookie sheet out before ruining the whole batch. When it comes to messing up something, when there’s a will, there’s a way and I’ll find it. After adding the topping, the next part is drizzling on the chocolate and this takes a little practice to make it look pretty. I used a spoon, but I’ve read that many people put the chocolate into a small ziplock bag and slice a corner off. Do what works for you and enjoy!
- 1 box of brownie mix
- 1 3.4oz can La Lechera (which is caramel flavored condensed milk)
- 2 cups sweetened coconut flakes
- ¼ cup evaporated milk
- ½ cup melting chocolate
Prepare and bake your brownies as directed on your brownie box in a 9x13 baking pan and let chill. If you like thicker brownies you can make this in an 8x8 pan.
Spread your coconut out on a baking sheet and toast at 350 for about 10 minutes. Don’t let it get too brown, so keep an eye on it.
In a small pan, cook your La Lechera and evaporated milk for 2-3 minutes and mix. You just need it hot, not boiling.
Now combine your coconut and caramel mixture and stir well.
Pour this mixture over your cooked brownies.
Now melt your chocolate in a microwave safe dish or small pan and drizzle over everything.
