Potatoes, Sausage and Green Beans

When I first started the blog I also began a Pinterest page to find new recipes and keep track of all of them. Every so often I run across one that instead of being just being stored for future use, I feel compelled to try it immediately. This is one of those recipes. Not only is it simple, but I got to throw everything into the crock pot and forget about it for six hours. This is a go-to recipe when you have company. You can adjust quantities pretty easily and if you wish, turn it into a side dish by adding more green beans and cutting back on the sausage. As always, bacon makes everything better. You can also add about 5 or 6 strips of cooked, chopped bacon.

Potatoes, Sausage and Green Beans

Ingredients

  • 6 medium potatoes peeled and diced
  • 1 pound kielbasa sausage sliced
  • 1 pound fresh green beans washed, stems and strings removed
  • 1 tbsp salt
  • 16 ounces chicken broth

Instructions

  1. Wash, peel and chop potatoes.

  2. Wash and remove the stems and strings from the fresh green beans. I cut mine into small pieces.

  3. Cut the kielbasa sausage into bite sized pieces.

  4. Add everything into slow cooker and stir to combine.

  5. Cover and cook on low for 6 to 8 hours.
