Potato, Bacon and egg breakfast

I’ve tried several versions of this breakfast over the years. Bacon, eggs and home fries are a staple around the country and basically this is all it is (with the twist of being cooked in one skillet). Of course there are all sorts of things that can be added to this breakfast like fresh peppers, sausage, or your favorite cheese if you so desire. I used Yukon gold potatoes but certainly russet would work as well.

Ingredients

  • 4 potatoes, (medium-sized), cleaned, peeled and diced into small pieces.
  • 2 tbsp olive oil
  • 4 slices of bacon diced
  • 2 scallions finely sliced
  • 4 large eggs

Instructions

  1. Heat the oil in a large skillet over medium heat.

  2. Fry the potatoes in the hot oil and cook while stirring occasionally, until golden and crispy (takes about 15 minutes)

  3. Add the bacon pieces to the pan and fry while stirring occasionally for 10 minutes until crisp.

  4. Add in some salt and pepper to taste.

  5. Make four wells; crack an egg into each well.

  6. Fry until the eggs are cooked to your liking.
