I’m not sure how many twists there are on a BLT these days, but one of my favorites is the BLT on a mini bagel. They are small enough to be used as appetizers at parties and kids love them.
Of course any time that I can add a little spice to a recipe to make it a little different, all the better. On top of the standard bacon, lettuce and tomato, I like to add in some smoked paprika, and just a little cayenne pepper. That will give it just the kick that it needs.
Mini BLT bagel bites
- 10 mini bagels
- 3 large tomatoes sliced
- 1 small head of lettuce (or bag of shredded lettuce)
- 10 slices of cooked bacon (I recommend thick peppercorn bacon)
- 1 teaspoon of smoked paprika
- ¼ teaspoon of cayenne pepper
Split and toast the bagels.
In a large skillet fully cook the bacon.
Slice tomatoes and sprinkle on the paprika and cayenne pepper.
Assemble and eat.
