Egg salad

Growing up with southern roots, egg salad is just one of those staple sides that went with everything from pulled pork to barbecued chicken and everything in between. It is really difficult to improve on egg salad. It is just one of those recipes that is darn near perfect when kept simple. Now I do like to switch a few little things like smoked paprika versus regular paprika and use green onions instead of white, but in the end it stays basic. The most radical change is using Miracle Whip instead of Mayo. In my opinion, that little extra tang just brings it all together. This recipe is just large enough for a big family or to have leftovers for a couple of days.

Ingredients

  • 12 Hard Boiled Eggs sliced and diced.
  • 4 Stalks Celery chopped
  • ½ Cup Miracle Whip
  • 1 TBSP Smoked Paprika
  • 1 TSP Salt
  • 2 TBSP Green Onion chopped
  • 1 TBSP Mustard
  • 2 TSP Lemon Juice
  • Salt and Pepper to taste

Instructions

  1. In a large bowl, combine all the ingredients and mix well.

  2. Refrigerate for about an hour and serve cold.
