“Eddie’s Biscotti”

Eddie’s Biscotti

In early December I got to spend a few days with my in-laws and discovered a few new recipes to try out and share. One of the more interesting ones was a Biscotti recipe that a family friend had passed along. I had never eaten Biscotti before, but I was pleasantly surprised at how good this turned out. According to my mother in-law, you tend to like things more when you make them and maybe that has something to do with it. Since returning home, I’ve been seeking out other Biscotti recipes to try as they are quite easy to make.

Eddie’s Biscotti

  • Cook Time: 45 min

Ingredients

  • 6 cups flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 2 cups sugar
  • 1 cup butter, melted
  • 6 eggs slightly beaten
  • 1 tsp anise oil
  • 3 tbsp water
  • 2 cup almonds
  • 1 cup candied citrus fruit
  • 1 egg white (for glaze)
  • 1 tbsp water (for glaze)

Instructions

  1. Pre-heat oven 375

  2. Sift dry ingredients into large bowl

  3. Make two wells on either side of the dry ingredients

  4. Pour melted butter into one

  5. Mix eggs, anise oil and water and pour into the other well

  6. Make sure the butter does not mix with the other mixture as you don’t want the warm butter to mix with the eggs right away

  7. Mix each side, and then mix everything together thoroughly.

  8. Add in almonds and citrus

  9. Stir everything well

  10. You may add more flour if mixture is too sticky

  11. Form into 8 logs about 1 ½ inch in diameter

  12. Place on cookie sheet

  13. Brush on the mixture of egg whites and water.

  14. Bake for 30 minutes

  15. Cool on rack

  16. Slice diagonally and bake for an additional 15 minutes
