As the summer heat kicks in, the last thing you want to do when you get home is fire up the stove. In just a few minutes with a handful of ingredients, you can whip up a tasty, crunchy cucumber caprese salad. We all know that some of the simplest recipes are usually the best ones, plus at the end of a hot day, stress free and easy is the only way to go.
With all salads, you can add a variety of things to make fit your taste. I’ve seen people add avocado, chopped nuts, and hard boiled eggs, but this particular recipe is the one most frequently passed around.
Cucumber caprese salad
- 2 TBSP olive oil
- 1 TBSP balsamic vinegar
- 1 TBSP dried basil
- dash of salt
- dash of pepper
- 1 cucumber, peeled and sliced thin or diced
- 1½ cups cherry tomatoes halved or quartered if you prefer
- 8oz fresh mozzarella, cut into small chunks
In a medium bowl mix together olive oil, balsamic vinegar, dried basil and a dash of salt and pepper; set aside.
Peel washed cucumber, slice thin or dice. Add to a bowl.
Halve the cherry tomatoes. Add to the bowl with the cucumbers.
Slice mozzarella into bite sized pieces. Add to bowl with cucumbers, tomatoes.
Pour marinade over vegetables and cheese; mix well.
Let sit for 10 minutes before serving.
