Now that summer has officially hit the bay area, I thought that I would share a slightly different fresh fruit treat. Just about everyone has tried chocolate covered cherries, strawberries, and bananas, but today I am going to suggest chocolate dipped pineapple slices/chunks. These bite size snacks only take a few minutes to make and will become a family favorite. Personally I like to drizzle the chocolate over the chunks instead of dipping, but there is no wrong way.
Of course living in the San Francisco bay area my go to chocolate is Ghirardelli, but if you have a different favorite, I won’t hold it against you. I also recommend going with fresh pineapple as this time of the year you’ll be able to find them at any grocery store. If you really want to spice this up, after you dip the pineapple into the chocolate, sprinkle some toasted coconut on them.
Chocolate pineapple treats
- 1 fresh pineapple, peeled, cored, cut into slices or chunks.
- 1 10 oz. bag Ghirardelli Dark Chocolate melting wafers.
- (Optional) 1 cup coconut flakes, I recommend toasting them.
Line a baking sheet with parchment paper.
Slice pineapple into slices or chunks.
Melt chocolate in microwave-safe bowl for 30 to 60 seconds or until smooth.
Dip pieces of pineapple in melted chocolate or drizzle chocolate onto pineapple and place on parchment paper.
Let stand until the chocolate hardens.
* Optional but recommended: Sprinkle with toasted coconut.
