Chocolate – peanut butter rice krispies treats

Anyone that knows me or that has read this blog understands my passion for chocolate and peanut butter. So it should come as no surprise that this combination shows up even in a Rice Krispies treat. Obviously I’m not the first person to come up with this, but from the recipes I’ve seen online, they do theirs a little differently.

I like to start off with cocoa Rice Krispies. You can obviously begin with regular ones and add cocoa powder and chocolate chips if you prefer. Then I like to add in some extra crunchy peanut butter and a little vanilla.
Now if you pack the rice krispies down into the pan you’ll get a denser treat (that’s the way I like them) or you can gently put it into the pan to get those airy treats. There really is no wrong way and no matter what you do they taste the same.

When I go on photography workshops this is the snack that I bring along and everyone loves them. They will last for days in a closed container or Ziploc bag, but that is only if you can keep from eating them for that long.

Chocolate – peanut butter rice krispies treats

Ingredients

  • 4 tablespoons butter
  • 10 ounce bag of mini marshmallows (5 1/2 cups)
  • 5 cups cocoa rice krispies
  • ¾ cup crunchy peanut butter (you could stretch it to a full cup)
  • 1 tsp vanilla

Instructions

  1. Line a 9x13 or an 8x8 baking pan with parchment paper or spray it very well with non-stick cooking spray.

  2. In a large pot, add the butter, marshmallows and peanut butter. Turn the heat to medium high, and melt while stirring continuously. The mixture should become a big sticky mess very quickly.

  3. Add in the vanilla and the cocoa rice krispies to the pot one cup at a time, and then stir, stir, and stir some more.

  4. Once everything is well mixed, press the warm mixture into the baking pan, using a buttered spatula or your hands to flatten it evenly.
