Beef & Tomato Macaroni Soup

I’ve tried a lot of different pasta dishes over the years, but had not tried a soup version before. I’m not a huge soup fan – growing up, I believed that soup was only consumed when you were sick. So when I stumbled across a recipe for it, I had to try it. After all, aren’t you supposed to try new things as you get older?

Adding the broth certainly gave the pasta a slightly different taste than I had expected. It isn’t overwhelming, just noticeable. You can use reduced sodium broth if you are watching your salt intake. I quite enjoyed this dinner. As with all pasta dinners, this one leaves plenty of left overs to be had over a few days. Adding a small garden salad would be great if you are serving this for company.

Beef & Tomato Macaroni Soup

Ingredients

  • 1 pound ground beef
  • 2 tsp onion powder
  • ½ tsp garlic powder
  • 2 - 14.5 oz cans beef broth
  • 2 - 28 ounce cans diced tomatoes
  • ½ cup ketchup
  • 2 Tbsp Worcestershire sauce
  • 2 Tbsp brown sugar
  • 1 tsp Italian seasoning
  • 2 cups dry macaroni
  • salt and pepper to taste
  • Cheese (if desired)

Instructions

  1. In a large stock pot, cook the ground beef until done, add garlic and onion powder. Drain the grease.

  2. Add the broth, cans of chopped tomatoes, Worcestershire, brown sugar, ketchup and Italian seasoning. Bring to a boil and simmer for 8-10 minutes.

  3. Add the dry macaroni and let cook for 15 minutes.
