This is a recipe that I found specifically for my in-laws during my trip to their home as they need what they call “legal” desserts. The use the term “legal” for any dessert that is safe for diabetics or fits into a specific diet. So it varies from person to person but I thought that it was interesting that all the visitors to their house were informed that these cookies were “legal”.
These cookies are quite interesting in that they have no flour or sugar and anything else I normally associate with cookies. They have a different type of texture but are quite soft and have good flavor. I’ve made these a few times since varying the amount of banana and raspberry, but the only thing that really made a difference to me was adding in the honey which I recommend.
- 1 Heaping cup of quick oats
- 1 large banana
- 1/2 cup raspberries (fresh or frozen – thawed)
- A splash of milk (if needed for mixing)
- (Optional) 1 tbsp of honey
Preheat your oven to 350°F.
Put half the oats and the banana in a blender and blend together. You can add a splash of milk if needed.
Add the rest of the oats and combine. Give a few pulses on the blender.
Add in the fresh (or thawed) raspberries and pulse a few more times.
Add in honey if you wish.
Drop a spoon size dollop onto a baking tray.
Bake 20 minutes or until you can lift up the cookies with a spatula without breaking them.
Cookies will be soft and chewy.
