After making the banana-raspberry cookies a few weeks ago, I went in search of a straight banana cookie. There are plenty to choose from, but I found one that tasted almost like banana bread and that was the winner in my opinion. These come out rather plain looking, but bursting with flavor. One added benefit is that your house will smell so good because of the cinnamon and nutmeg.
- ½ cup butter softened
- 1 cup of sugar
- 1 egg
- 2 large bananas mashed
- 1 tsp of baking soda
- 2 cups of flour
- A pinch of salt
- ½ tsp of ground cinnamon
- ½ tsp of ground nutmeg
- 1 cup of walnuts
Preheat the oven to 350°F.
Using a mixer, beat the butter and sugar together until light and fluffy and then add the egg and continue to beat until the mixture is completely mixed.
In a separate bowl, mix the mashed bananas and baking soda. The baking soda reacts with the acid in the bananas and gives the cookies their rise.
Mix the banana mixture with the butter mixture.
Whisk the flour, salt, and spices. Add to the butter and banana mixture and mix until combined.
Fold in the walnuts into the batter.
Drop in dollops onto baking sheet. Bake for 12-13 minutes or until nicely golden brown.
