Baked lemon tilapia

In our home we rarely eat fish although we both like it. Somehow it seems harder to cook than it actually is, so I’ve been seeking out various recipes to see if we can get into the habit of eating it. Tilapia is one of those easy to cook fish, so figured that we would start with that. You can find fresh tilapia just about everywhere which makes it that much easier.

I found that the lemon was a little heavy for my taste, so I would limit it to 1 tablespoon in the future. In just 12 minutes the fish came out of the oven nice and flaky, cooked perfectly. I would recommend using a glass pan for fish as I believe that it works better. Serve this with brown rice or potatoes and you have a quick dinner that’s ready for company.

Ingredients

  • 1/3 cup butter, melted
  • 1 tbsp garlic powder
  • 2 tablespoons freshly squeezed lemon juice
  • 4 (6-ounce) tilapia fillets
  • Salt and freshly ground black pepper, to taste
  • Garnish with fresh parsley if desired

Instructions

  1. Preheat oven to 425 degrees. Lightly spray a 9×13 baking dish with nonstick spray.

  2. In a small bowl, whisk together butter, garlic, lemon juice; set aside.

  3. Season the tilapia with salt and pepper to taste and place into baking dish. Drizzle with butter mixture.

  4. Place into oven and bake 10-12 minutes.
