Bacon and pasta

Very recently I stumbled across a recipe for pasta that I had never seen or heard of before and instantly knew that it would become a favorite in our house. Of course it was simple: pasta, tomatoes and bacon. How could this not be good? However, when I made the dish, the canned tomatoes didn’t quite cover the pasta the way I like it, so I ended up adding a little extra sauce to the mix.

I’ll admit that I had never considered adding bacon to pasta for whatever reason, but it will be a staple in all of them going forward. If you have not added bacon to your pasta before, do it. They go together like peanut butter and chocolate. Of course we went with bow tie pasta, but you can use this recipe with any style pasta you wish.

Bacon and pasta

  • Cook Time: 15 min

Ingredients

  • 6 slices of bacon (fried and crumbled)
  • 1 tbsp vegetable oil
  • 1 small onion, chopped
  • 1 tsp garlic powder
  • 14.5 oz diced tomatoes
  • 1 jar of tomato sauce.
  • Salt to taste
  • 1 lb bowtie pasta, cooked to package directions

Instructions

  1. Fry the bacon to crispy.

  2. Reserve 2 tbsp of bacon grease in the pan and add 1 tbsp vegetable oil.

  3. I prefer my onions raw, but you can sauté them in oil until translucent.

  4. Add the garlic, tomatoes, and salt to taste.

  5. Simmer for 20 minutes.

  6. Crumble bacon and mix into sauce.

  7. Cook pasta according to directions on box

  8. Toss with cooked pasta.
